With its rich volcanic soils and unique climate, Kangaroo Valley in New South Wales is bounded by the South Coast and Shoalhaven areas and is one of Australia’s oldest and most respected agricultural districts. Long hot summers and cold winters with occasional frosts provide the perfect environment for the growing of premium quality hand harvested olives.

Every Kangaroo Valley Olives product has been produced to capture the goodness of Kangaroo Valley in our delicious fare that not only tastes good, but also retains the freshness and goodness that olives offer. Careful processing and strict protocols result in unique and highest quality table olives, oils and tapenades, with the exceptional climate of Kangaroo Valley and its rich-red volcanic soil producing a wonderful balance of tastes and flavours.

Our olives range in colour and size, from green to purple to black and from the small nuttier varieties to large and fleshy types. Our olives are hand-harvested and left whole - neither cracked nor slit - but left unpitted and unblemished to allow the maturity and aging process to proceed without the risk of any deleterious effects on the finished product.

The superb taste of our products offers a complex balance of fruitiness and bitterness, delighting even the most discerning connoisseur. After our whole olives have been cured in brine for approximately 6 months, the olives are again sorted and with the use of handmade marinades using the finest herbs and spices are placed whole into individual low-carbon foot-print resealable pouches, ready to delight the most discerning of palates or processed into tempting tapenades, pastes and salsas in our own processing facility.

Our gourmet olives and olive products are available from our own processing facility and cellar door: The Kangaroo Valley Olives Centre; as well as select shops and wineries in Kangaroo Valley and the South Coast/Shoalhaven region - as well as online through our website.

Kangaroo Valley is one of only seven fully enclosed valleys in the world. Its rich volcanic soils and the unique microclimate of Kangaroo Valley provide an idyllic region for the growing of olives. Beautiful olive groves have been quietly planted and lovingly tended by local farmers and there’s no doubt about the beauty of these secret groves, with the soft pale grey-green leaves of the trees contrasted with the vibrant green pastures of the valley, all nestled below the spectacular escarpments that Kangaroo Valley is renowned for. Kangaroo Valley has over 4,000 trees with a mix of varieties, producing olives for both table olives and olive oil. Varieties include Kalamata, Jumbo Kalamata, Manzanillo, Frantoio, Paragon, Koroneiki, Corrigiola, Ligurian and Nevillo Blanco.
