Here at Kangaroo Valley Olives, our team has been checking where our Table Olives are up to in the varying stages of losing their natural bitterness. Currently they’re all at different stages but are all on their way to becoming less bitter. The checking process is continuous one; it involves adjusting salt levels to give our olives the very best chance to be the best we can produce and with the most optimal flavour and taste. This job also involves rearranging the “Brine Room” as well as cleaning it down and is always a satisfying task to complete. This processes are what gives our Olives their delicious flavour and texture.

Our olives are lovingly hand-picked individually and processed naturally, using traditional methods to preserve their natural flavour and essence. All of our lives and products are available to purchase in our online shop.
